This Champagne is wonderfully fresh, vibrant, and pure. It has a delicately perfumed nose with notes of pear, brioche, white flowers and lemon zest, while on the palate is a touch of spice, white peach, and lemon flesh. This wine is very well balanced, with an elegant and creamy mousse, flinty minerality, and a long satisfying finish.
Like all of Laherte's Champagne, the NV was disgorged 'à la volée'. This means 'by hand', and disgorgement refers to the process of removing the sediment from sparkling wine and Champagne (a by–product of the fermentation process, and a process that is now mostly automated).
This wine is made from organic and biodynamic grapes. No pesticides or herbices are used.
Jousset 'Bubulle' Montlouis sur Loire Pet Nat 2015
This is the pinnacle of Jousset sparkling wine, the natural version of l’Apétillant. Bubulle is a Pet Nat creation from some of the Domaine’s best yet leanest Chenin Blanc fruit. The fruit is picked and sorted meticulously, pressed, and sent to a fibreglass tank for fermentation. The wine is bottled whilst still fermenting, and spends a further 6-10 months on lees. The wine is then disgorged and topped up with the same wine (zero dosage).
This is the purest expression of the raw materials, zero entrant winemaking, except a little SO2. Bubulle is very refreshing, very pure, yet incredibly deep, subtle, profound and vinous. We have enjoyed drinking some aged vintages, which develop a honey, floral complexity, with a delicate mushroominess. But it is hard to store them, as they are so delicious young!

He is thoughtful, inquisitive and deeply in love with his vineyards. He is driven by the notion that to make healthy, vibrant wines the ambient bacteria on the vineyard must be in the best and most balanced condition. Thus, his vineyard treatments are now hyper natural - sulphur barely ever being employed, and the resultant wines bare all of the beautiful, expressive hallmarks that only come with the very healthiest of fermentations. This cuvee is 100% chardonnay, run to bottle midway through fermentation. The fermentation finishes in bottle, creating a refreshing bead and the wine is disgorged roughly 6 months later.
